Jake's Bumbu Bali just opened back in April and they're already in our top picks for food trucks. Not only is the founder and head chef, Jake Thompson, one of our dear dear friends, he makes some of the tastiest food to ever come out of a truck. In the first bite, you can taste the creativity, time and care that he puts into each dish and hey, where else have you ever had Balinese food in Colorado?
When I tell friends about Bumbu Bali, one of the first things I hear is, "What is Balinese food?" It's a unique flavor that I've definitely never had anywhere else, but it's made with components that are familiar. It's a sensation of sweet, sour, spicy, and earthy. The textures are perfect, the flavors and spices are just right, and you feel energized and satisfied after you eat. In my favorite dish on the menu, Nasi Campur, you get 2 choices of protein, either crispy fish balls, savory chicken, juicy pork or sweet spice tempe. That goes onto a bed of basmati ride, comes with a side of urab salad, your chose of tomato or peanut sauce (Always always always get both sauces), and topped with fried shallots. This dish is ridiculously delicious. I know it sounds simple, but I think that's really the trick of it. As Levon Helm said, "Ain't it easy when you know how." I definitely couldn't recreate this delightful flavor in my home kitchen and I'm always on the lookout to find when this truck will be set up next.

Usually, there are 3-4 days that you can chase them down and you might just see me there. I think I might be their biggest fan and I know that the more people that try Bumbu, the more competition I'll have for the title. Check the schedule, find them on Facebook and give them a like.
